INGREDIENTS
- 2 teaspoons olive oil
- 4 (4-ounce) boneless, chicken
- 1/4 teaspoon sea salt
- 1/4 teaspoon ground black pepper
- 2 mangos, peeled and diced
- 1 green and red bell pepper, chopped
- 1 cup low-sodium chicken broth
- 2 green onions, chopped
- 2 tablespoons chopped nuts
- 1 tablespoon fresh lime juice
- 1 teaspoon lime zest
- 1 teaspoon finely chopped garlic
- Extra Garnish: cashew nuts and toasted sesame seed (optional)
INSTRUCTIONS
- In a large skillet, heat oil on medium-high. Season both sides of chicken with salt and pepper. Add chicken to skillet, and cook for 1 to 2 minutes per side, until golden brown.
- Add mangos, bell pepper, broth, green onions, lime juice, lime zest and garlic, and bring to a simmer. Reduce heat to medium. Partially cover, and cook for 5 minutes, until chicken is cooked through. Serve immediately.
