INGREDIENTS
- 2 cups glutinous rice
- 1 cup coconut milk
- 1 can jackfruit, drain and cut into strips
- 1 cup brown sugar
INSTRUCTIONS
To make kalamay:
- Combine 2 cups glutinous rice with water to make a soft dough.
- Place the mixture in a non-stick round baking dish and steam until cooked, let it cool and cut into bite size, set aside.
To make a simple syrup:
- Boil 1 cup brown sugar and 1 cup water then add the stips of jackfruit.
To make latik:
- Cook 1 can coconut milk in a medium heat until the liquid starts to thicken and become oily. Lower heat and start to stir regularly to prevent burning and sticking to the pan.
- Continue to cook until the solids become golden brown and separates from the oil.
- Place kalamay in a dish and pour syrup all over.
- Serve warm topped with latik.
