SEAFOOD LOMI SOUP

INGREDIENTS

  • 1/4 kg squid, sliced
  • 1 cup shrimps, peeled and deveined
  • 1/2 cup chicken liver sliced
  • 1 medium onion, minced
  • 2 cloves garlic, minced
  • 2 tablespoons cooking oil
  • ½ cup carrots, thinly sliced
  • 2 cups cabbage, shredded
  • 250 grams lomi noodles
  • 2 eggs, beaten
  • 3 cups water or chicken stock
  • salt and pepper to taste

INSTRUCTIONS

  1. Sauté garlic and onion until onion is translucent. Add chicken liver and stir fry for 5 minutes. Add carrots. Mix all and stir for another 5 minutes.
  2. Pour in water or chicken stock and bring to a boil. Add lomi noodles and then simmer for 5 minutes. Add cabbage, shrimps, squid and the beaten eggs, Season with salt and pepper and mix to coat everything. Simmer under low heat for 5 minutes more.

Serve hot and enjoy!
