INGREDIENTS

  • 1kl Fish of your choice (Bisugo, Bangus, Galunggong, Tuna, Yellow Fin, Sap-sap, Dalagang Bukid, Maya-maya etc.)
  • 5 large Tomatoes – sliced thinly
  • 1 whole Garlic – crushed
  • 2 large Onion – sliced thinly
  • 1 medium size Ginger – sliced thinly
  • 5 pc Green Chili Pepper
  • 1/8 cup Fish sauce (Patis)
  • 1/8 cup Vinegar
  • 1 1/2 cups Water
  • 1/2 tbsp Pepper corn

PROCEDURE

  1. After cleaning the fish, put some salt (to maintain the natural flavor of fish meat and to keep its freshness)
  2. In a sauce pan, casserole or clay pot (as much as possible never use aluminum or metal cookware when preparing sour dishes to avoid chemical food contamination) place your favorite fish, top with ginger, tomatoes, garlic, onion, green chili pepper and pepper corn.
  3. Season with Fish sauce.
  4. Add water and bring to a boil. Let it boil for about 3-5 minutes.
  5. Add the vinegar and boil for another 30 seconds. Remove from fire and serve.
