Jokbal is an unique Korean cuisine made mainly with Pig leg and feet. Pig leg is boiled with other ingredients and after it is fully cooked, it is served with various other food. It is usually prepared in thick slices, but some people prefer to eat it as it is. Due to its greasiness, Jokbal goes really well with something spicy like Kimchi.
INGREDIENTS
- 4 pigs feet, split in half lengthwise
- 2 large onions,
- 200 grams brown sugar
- 236 ml soy sauce
- 4 inch knobs of ginger
- Korean rice syrup 350g (molasses made from rice)
- 2 stalks celery, chopped roughly
- 10 cloves of garlic,
- 2-4 sticks cinnamon
- 1 bay leaf
- 1 teaspoon black pepper
- 3 teaspoon crushed red pepper
- water
METHOD
- Wash and clean the pigs feet well.
- Razor hair or by blowlamp.
- Put all the ingredients in a large boiling pot and cover with water.
- Boil water over medium high heat and then reduce heat to a simmer.
- Cover the pot and allow pigs feet to cook for about 2 to 3 hours until soft.
- Constantly stir and skim off scums and foams.
- Onced cooked, turn off heat and let it cool for few minutes and remove the legs from the broth.
- Let it cool.
- Remove the shin bones to obtain easily sliced rounds of the cooked meat. Slice the meat into 0.5 cm (1/4″) thick rounds.
Serve this savory meat with fresh lettuce vegetables.
Dipping Sauce:
- 1 Tbsp salted shrimp
- Sliced green-onion
- Kochujang paste
- Garlic
- Rice wine vinegar or lemon juice
- Mix it together as a fairly thick sauce
