Mexican Brownies

INGREDIENTS

  • 4 oz unsweetened baking chocolate, chopped
  • 3/4 cup unsalted butter
  • 1 cup granulated sugar
  • 3/4 cup, packed brown sugar
  • 3 large eggs
  • 1 tablespoon vanilla extract
  • 2 tablespoons unsweetened cocoa powder
  • 1 teaspoon espresso powder
  • 1 teaspoon cinnamon, ground
  • 1/2 teaspoon cayenne pepper
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1 cup all-purpose flour
  • 1 cup mini chocolate chips

DIRECTIONS

  1. Preheat oven to 350
  2. Line a 9×13 pan with parchment paper, or spray with nonstick spray, set aside
  3. In a medium saucepan melt chocolate and butter over medium heat until well combined
  4. Remove from heat
  5. Stir in sugar & brown sugar until well combined
  6. Whisk in eggs, until just combined
  7. Stir in vanilla, cocoa powder, espresso powder, cinnamon, cayenne pepper, chili powder & salt
  8. Stir in flour & chocolate chips until just combined
  9. Pour batter into prepared pan
  10. Bake for 20-25 minutes, or until brownies are just set
  11. Remove and let cool in pan for 5 minutes
  12. Remove brownies from pan and let cool completely
