INGREDIENTS
For the Jelly yolk:
- 50gm carrots puree
- 150gm water
- 25gm sugar
- 1 tsp agar-agar powder
Coffee Jelly Mooncake: (Cream Cheese filling)
- 250gm milk
- 30 gm sugar
- 1 tsp agar-agar powder
- 50g cream cheese (beat to soften)
Coffee Skin filling
- 450gm water
- 45 gm sugar
- 2 1/2 tsp agar-agar powder
- 1 1/2 instant coffee mixed with 3 1/2 hot water
INSTRUCTIONS
For the Jelly yolk:
- Put all to cook with water 2min
- Pour into mould to set, chill in ref (you might want to measure how much liquid your mould can hold and adjust accordingly)
Coffee Jelly Mooncake: (Cream Cheese filling)
- Cook milk, sugar, agar-agar powder
- Add cream cheese
- Pour into mould, let rest, before set, put yolk at middle, chill in ref
Coffee Skin filling:
- Cook water, sugar, agar-agar powder
- Add instant coffee mixture.
Assemble
- Pour little coffee into mooncake mould, just to cover the base, let set but not completely
use fork scratch the surface a little, pour some coffee gain, put the cream cheese, then pour coffee to cover. Set aside and chill

Dragon fruit filling:
- 250gm water
- 30gm sugar
- 1 tsp agar-agar powder
- 60 gm dragon fruit (i use frozen, blended 30sec)
Plain skin:
- 450gm water
- 45 gm sugar
- 2 1/2 tsp agar-agar powder
INSTRUCTIONS
Dragon fruit filling:
- Cook water, sugar and agar 3min
- add dragon fruit 30sec
- Pour to mould, add egg yolk, chill
Plain skin
- Cook water, sugar, agar-agar powder 4min
Assemble like coffee
Note:
- Mine is reduced sugar, about half
- You might need to adjust amount based on ur mould
- Add cooking time if temp did not rise to 100
