Pork Adobo with Coke

INGREDIENTS

  • 1 kilo pork belly or kasim
  • 1 can of regular coca cola
  • 4 cloves of minced garlic
  • 4 dried bay leaf
  • 1/2 teaspoon peppercorn
  • 1/8 cup soy sauce
  • 1/8 cup cane vinegar
  • salt to taste

INSTRUCTIONS

  1. Slice the pork into cubes. Place it in a casserole and pour 1 can of coca cola. Add your garlic, peppercorn and bay leaf. Cook in medium heat and let it simmer for 30 minutes to 45 minutes. Stir occasionally.
  2. Add your soy sauce, vinegar and salt to taste. Let it simmer for another 30 minutes. Stir occasionally. Serve.

NOTE:

  • If you want your Adobo with a little bit of sauce or you prefer it dry, it’s okay. I usually leave a little bit of sauce for the little kids. I can heat it again for the next serving and let it dry this time. Both taste good.
  • My secret ingredient is the Coca Cola. The meat is tender and even the fat itself taste better. Normally, Adobo is simmered with water not coke. However, I know which one taste better.
