INGREDIENTS
- 1 package Crab Cake Mix (recipe below)
- 1/2 cup mayonnaise
- 1 pound fresh crabmeat, drained and cartilage removed
- 1/4 cup vegetable oil
TARTAR SAUCE
INSTRUCTIONS
- In a large bowl, combine Crab Cake Mix and mayo. Add crabmeat and gently toss until well blended. Shape into 24 balls.
- Fry in batches in hot oil until golden brown, turning once. Drain on paper towels. Serve with tartar sauce.
TIPS
- Substitute for Fresh Crab: 2 (6-ounce cans) crabmeat, drained
Homemade Crab Cake Mix
INGREDIENTS
- 1 -ounce olive oil
- 1/2 Medium yellow onion, small dice
- 1 stalk celery, small dice
- 2 pounds crab meat
- 1/2 cup mayonnaise (recipe to follow)
- 2 tablespoons parsley, chopped
- 1 1/2 ounces Japanese bread crumbs
INSTRUCTIONS
- In saute pan, add olive oil. Sweat onions and celery in oil. Set aside.
- In a separate bowl, mix crab meat, mayonnaise, parsley, bread crumbs and onion-celery mixture. Chill.
