INGREDIENTS
- 1 3/4 cups All Purpose Flour
- 2 1/2 tablespoons sugar
- 1 tablespoon baking powder
- 1/4 teaspoon salt
- 1 egg
- 1 1/2 cups milk
- 3 tablespoons cooking oil
- 5 Tablespoon Ube jam.
Cooking spray or cooking oil - Additional ube jam for topping.
- Coconut sport (Macapuno) for topping.
- Margarine
- Karo syrup (optional)
- Powdered Sugar (optional)
INSTRUCTIONS
- In a large bowl, combine flour, baking powder, salt, and sugar.
- In a separate bowl, lightly beat the egg. Add milk, and oil. Mix until fully combined.
- Transfer liquid mixture to the flour mixture. Stir until all ingredients are blended.
- Add Ube (purple yam) jam. Mix lightly but leave some clumps in the mixture.
- Lightly grease frying pan with cooking spray or cooking oil.
- Place pan on medium heat. Pour about 1/4 cup batter onto the pan.
- Cook until it starts to bubble. Turn and cook the other side until golden brown.
- Spread margarine.
- Serve with additional ube jam and macapuno as topping.
Options: Sprinkle powdered sugar or add Karo Syrup
