INGREDIENTS
- 1.5 cups romaine lettuce, diced
- 1 red bell pepper, sliced
- ½ tomato, sliced
- Small handful cilantro, chopped
- ¼ red onion, sliced
- ¼ cup jicama or singkamas, sliced (optional)
- ½ an avocado, sliced
Protein Option:
- Meat Eaters: Grilled chicken or steak
- Vegan: ¼ cup black beans, drained
Dressing:
- Juice of 1 lime
- 2 tbsp olive oil
- 1 tsp cumin
- salt & pepper to taste
INSTRUCTIONS
- Put romaine, cilantro, bell pepper, onion and jicama into a bowl and set aside.
- Mix dressing ingredients and adjust to taste.
- Add protein choice and dressing to salad and toss. Top with avocado slices and serve.
