(Stuffed Palitaw with Ube and Nutella Filling)

INGREDIENTS

  • 1 cup glutinous rice flour
  • 1/2 cup water
    1 tsp oil
  • Dessicated coconut
  • Sugar to taste
  • Ube Halaya Filling (recipe below)
  • Nutella Filling (optional)

INSTRUCTIONS

  1. Mix glutinous rice flour, water and oil, knead until smooth.
  2. Roll like a ball and flatten with your hands, put a tsp filling in the center and roll into a ball.
  3. Cook it in a boiling water (palitaw are cooked when they float)
  4. Let it cool and roll in a fine desiccated coconut.
  5. Use sugar for dipping. (Optional)

How to cook Ube Halaya Filling (Ube Powder)

INGREDIENTS

  • 3/4 cup purple yam powder
  • 1-1/2 cups milk
  • 3/4 cup sugar
  • 1 egg, beaten
  • 1 tsp. unsalted butter
    (Measuring Cooking)

INSTRUCTIONS

  1. Place yam powder and milk in a saucepan; mix thoroughly.
  2. Add sugar, egg and butter; simmer over low heat for about 1 hour.
  3. Stir constantly using a wooden spoon until the mixture thickens and becomes elastic.
  4. Transfer the mixture into a lightly greased containers with lid; let cool to room temperature. Do not cover while still hot.
  5. When cooled, cover and chill in the refrigerator for about 3 hours; serve chilled in individual bowls.
