CRISPY CRAB BALLS

INGREDIENTS

  • 1 package Crab Cake Mix (recipe below)
  • 1/2 cup mayonnaise
  • 1 pound fresh crabmeat, drained and cartilage removed
  • 1/4 cup vegetable oil

TARTAR SAUCE

INSTRUCTIONS

  1. In a large bowl, combine Crab Cake Mix and mayo. Add crabmeat and gently toss until well blended. Shape into 24 balls.
  2. Fry in batches in hot oil until golden brown, turning once. Drain on paper towels. Serve with tartar sauce.

TIPS

  • Substitute for Fresh Crab: 2 (6-ounce cans) crabmeat, drained

Homemade Crab Cake Mix

INGREDIENTS

  • 1 -ounce olive oil
  • 1/2 Medium yellow onion, small dice
  • 1 stalk celery, small dice
  • 2 pounds crab meat
  • 1/2 cup mayonnaise (recipe to follow)
  • 2 tablespoons parsley, chopped
  • 1 1/2 ounces Japanese bread crumbs

INSTRUCTIONS

  1. In saute pan, add olive oil. Sweat onions and celery in oil. Set aside.
  2. In a separate bowl, mix crab meat, mayonnaise, parsley, bread crumbs and onion-celery mixture. Chill.
