The hardcore Ilocano way of cooking this dish is with goat’s head and feet. And since these are hard to find. I will cook for goats meat.
INGREDIENTS
- 2 pounds goat meat w/ bones, cut into pieces
- 1 large onion, chopped
- 1 cup young tamarind leaves/tamarind fruits or 1 packet of tamarind powder mix
- 10 pieces long finger peppers
- 1 thumb-sized ginger, peeled & sliced into matchsticks
- 2 stalks celery including leaves, finely chopped
- 10 cups water
- Salt or fish sauce to taste
INSTRUCTIONS
- In a large pot with water, add the meat, ginger and onions. Let boil and continue cooking until meat is tender. Remove impurities that rise to the top.
- Season with fish sauce or salt.
- Add finger peppers, celery and tamarind leaves/fruits or tamarind powder mix. Simmer for 15 minutes more.
