Chicken Guisantes

INGREDIENTS

  • 2 lbs. chicken thigh, cut into serving pieces
  • 1½ cup frozen green peas
  • 1 (14 oz.) can diced tomatoes
  • 1½ cup chicken stock or broth
  • 1 medium roasted red bell pepper (capsicum), sliced
  • 1 medium yellow onion, diced
  • 4 cloves garlic, crushed
  • 3 tablespoons cooking oil
  • Salt and pepper to taste

INSTRUCTIONS

  1. Heat the cooking oil in a cooking pot.
  2. Saute the garlic and onion.
  3. Once the onion becomes soft, add the chicken slices. Cook each side of the chicken until it turns light brown (around 2 minutes). Make sure to turn the chicken over to cook the other side.
  4. Add the diced tomatoes and chicken broth. Stir and let boil. Cover and simmer for 30 to 40 minutes.
  5. Add the green peas. Stir and cook for 3 minutes.
  6. Put-in the red bell pepper. Stir and cook for another 3 minutes.
  7. Add salt and pepper to taste.
