INGREDIENTS
Tuna Salad Ingredients:
- 1 can Tuna Lite Hot and Spicy
- 1 can Tuna Flakes in Oil
- 150 g Baguio (iceberg) lettuce, shredded
- 4 tbsp sour cream
- 40 g grated cheese
- 30 g chopped onions
- 80 g chopped red bell pepper
- 1/4 tsp chili powder
- 1/2 tsp ground cumin
- 1/2 tbsp olive oil
Salsa Ingredients:
- 230 g fresh tomatoes, de-seeded and chopped
- 8 g cilantro, chopped
- 1 tbsp lime juice
- 1 1/2 tbsp extra virgin olive oil
- 1/4 + 1/8 tsp salt
- 1/2 tsp cumin
- 30 g chopped onion
** Combine all salsa ingredients together. Let stand so that flavors mix well.
INSTRUCTIONS
- Make the tuna filling by heating oil in a medium nonstick pan and cook onions until translucent.
- Add bell pepper and cook for 2 more minutes.
- Saute tuna, breaking it into small pieces with fork.
- Add cumin and chili powder and cook for another 2 minutes.
- Turn off heat and set aside.
In a salad bowl layer as follows:
- 2 layers of lettuce, tuna filling then salsa
- top with sour cream then cheese
Serves 4.
