Tuna Tex-Mex Salad

INGREDIENTS

Tuna Salad Ingredients:

  • 1 can Tuna Lite Hot and Spicy
  • 1 can Tuna Flakes in Oil
  • 150 g Baguio (iceberg) lettuce, shredded
  • 4 tbsp sour cream
  • 40 g grated cheese
  • 30 g chopped onions
  • 80 g chopped red bell pepper
  • 1/4 tsp chili powder
  • 1/2 tsp ground cumin
  • 1/2 tbsp olive oil

Salsa Ingredients:

  • 230 g fresh tomatoes, de-seeded and chopped
  • 8 g cilantro, chopped
  • 1 tbsp lime juice
  • 1 1/2 tbsp extra virgin olive oil
  • 1/4 + 1/8 tsp salt
  • 1/2 tsp cumin
  • 30 g chopped onion
    ** Combine all salsa ingredients together.  Let stand so that flavors mix well.

INSTRUCTIONS

  1. Make the tuna filling by heating oil in a medium nonstick pan and cook onions until translucent.
  2. Add bell pepper and cook for 2 more minutes.
  3. Saute tuna, breaking it into small pieces with fork.
  4. Add cumin and chili powder and cook for another 2 minutes.
  5. Turn off heat and set aside.

In a salad bowl layer as follows:

  • 2 layers of lettuce, tuna filling then salsa
  • top with sour cream then cheese

Serves 4.
