BAKE BIKO WITH LATIK

INGREDIENTS

  • 6 cups glutinous rice
  • 3 cups water
  • 2 cans coconut milk
  • 1- 1 1/2 cups brown sugar (adjust sweetness)
  • 1 tsp salt

INSTRUCTIONS

  1. Cook the glutinous rice with water in a rice cooker. Rice should be undercooked.
  2. Pour the glutinous rice in a baking 9×13 dish.

LATIK:

  1. In a saucepan add the coconut milk, sugar and salt.
  2. Bring to a boil until mixture is dark brown and very thick.
  3. Pour out onto the rice and spread evenly.
  4. Bake at 350F for 15 mins.
