Chocolate Suman Moron  (Chocolate Rice Cake)

INGREDIENTS

Plain Suman:

  • 2 cups rice flour (Combine 1&1/2 cup of rice flour to 1/2 cup glutinous rice flour)
  • 1/2 cup evaporated milk
  • 1 teaspoon vanilla
  • 1 cup coconut cream (some are using coconut milk but I prefer to use the cream which adds richness and makes the mixture thicker)
  • 1 cup white sugar


Chocolate Suman:

  • 2 cups rice flour (Combine 1&1/2 cup of rice flour to 1/2 cup glutinous rice flour)
  • 4 tablespoon cocoa powder (I’m actually using Hershey cocoa powder but you can use any brand)
  • 1 teaspoon vanilla
  • 1 cup coconut milk
  • 1 cup brown sugar
  • 1/4 cup chopped roasted peanuts (unsalted) (You can use unroasted peanuts as per desired form/taste)

To wrap:

Banana leaves, thick sewing thread (to be used in closing both ends of the banana leaves wrap)

PROCEDURE


1. Cook the two suman separately.

Plain Suman:

  1. Combine the rice flour and glutinous rice flour together, then mix the vanilla and white sugar until evenly distributed.
  2. Now, place the mixed dry ingredients in a non-stick pan and stir in the evaporated milk and coconut milk until well blended.
  3. Cook the mixture in medium heat making sure to stir the mixture regularly until thick and smooth.
  4. Set aside to cool.

 

Chocolate Suman:

  1. Combine the rice flour and glutinous rice flour together, then mix the vanilla, brown sugar, cocoa and peanuts until evenly distributed.
  2. Now, place the mixed dry ingredients in a non-stick pan and stir in the coconut cream until well blended.
  3. Cook the mixture in medium heat making sure to stir the mixture regularly until thick and smooth.
  4. Set aside to cool.

Wrap the Two (Plain Suman and Chocolate Suman)

  1. First, prepare the banana leaves by passing on top of stove flames. Immediately brush with butter or margarine. Cut the banana leaves according to desired length of the suman.
  2. Use a spoon to scoop desired amount of chocolate mixture and roll with your hands to form a long shape similar to tubes. The length should be enough to fit your desired size of the suman. Repeat the same to the plain suman.
  3. Place the rolled plain suman beside the chocolate suman then twist together.
    Wrap now by the two-colored suman with banana leaf. Secure both ends with a string.
  4. Steam for 30 to 45 minutes until cooked.

This recipe of Chocolate Suman Moron approximately yields 15 to 18 pieces.

To store, allow to cool first then place in the refrigerator. Your suman can last up to one week.
