LECHON KAWALI BUT COOKED IN THE OVEN (Roasted Pork Belly)

Note: Prepare 1 day before

INGREDIENTS

  • 2 kilos Pork Belly (each kilo sliced into 4)
  • 1 cup vinegar
  • 3 heads garlic crushed
  • 2 onions sliced
  • 1/3 cup salt
  • 2 tbsp black peppercorn
  • 6-7 cups water
  • 5 dried bay leaves
  • 1 lemongrass (optional)

PROCEDURE

  1. Combine all ingredients in a big casserole. Let it boil in a high fire with lid..Once reached the boiling point, turn into low fire, cover and simmer for 1-1 1/2 hours until the skin is fork tender.
  2. Remove the pork and drain in colander with skin side up. Let it cool at room temperature. Keeping the pork in colander uncovered, place in the fridge and chill overnight.
  • 3 hours before the party
  1. Preheat oven to 225 degrees C for 10 mins.
  2. Season the pork generously with salt. Line baking tray with foil. Place the pork on baking tray with skin side up and start roasting.
  3. Roast both sides. Tap the skin with fork or knife, if it’s very hard that means it’s ready and crispy. Chop with chopping knife.

Serve with Mang Tomas sauce or Papaya Sweet Pickles.
