INGREDIENTS
- 200g besan / flour
- 1 tsp baking powder
- 1 tbsp yogurt
- 2 large potatoes (cut into small pieces)
- 4 green chilies chopped
- 2 large red onions thinly sliced
- Salt to taste
- 2 tsp red chilli flakes
- 1 tsp cumin seeds
- 2 tsp whole coriander seeds
- 1 tsp garam masala
- Some cold water ( ½ cup) to make the paste
- 4 tbsp chopped fresh green coriander
- Oil for deep frying
Optional ingredients
- Spinach
- Frozen veg – peas – carrots – sweetcorn
- Cauliflower
METHOD
- Combine the flour with all the ingredients except the water.
- Gradually mix in some cold water and make a medium consistency paste (Not too thin)
- Heat oil and drop in a tbsp of pakora batter and deep fry until brown and crispy (4-5 mins)
Serve with naan, salad and mint chutney
