INGREDIENTS
- 2 tablespoons oil
- ½ onion, cut into rings
- 1 cup water
- 1 cup coconut milk
- 25g seafood curry powder
- 1 tomato, cut into wedges
- 6 okras (lady’s fingers)
- 10-12 curry leaves
- 600g squid, cleaned
- 1 teaspoon salt or to taste
METHOD
- Heat up the cooking oil in a pot. Add the onion and stir-fry until aromatic.
- Add the coconut milk, water, curry powder, tomato, okras, curry leaves and bring it to boil.
- Add the squid and cook for about 3 minutes, or until they are cooked. Make sure not to overcook the squid or they would turn rubbery.
- Add salt to taste and serve immediately.
